The industry's dirty work: who's gonna do it?

Reading this article from the current issue of Business Week magazine, I wondered if our industry has thought much about the implications of the various immigration laws being passed in US states.

This particular article focuses on farms, nurseries, and a fish processing plant in Alabama.  It mentions, in passing, the hospitality industry among the “dirty jobs” that many do not want.

Consider the implications of this article on food availability and prices, on service in our industry.  Are we willing to pay more for workers who might even consider doing these “dirty jobs”?

I wonder.
