Gaylord Hotels’ Westward Expansion, Carbon-Positive Hotels and More New and Renovated Properties in the West

Explore major hospitality developments in California, Montana, Washington and Mexico. From Hotel del Coronado’s $550M restoration to the debut of Gaylord Pacific and carbon-positive Populus Seattle, see how these hotels are reshaping events, wellness and sustainability.

California

Hotel del Coronado completed a $550 million, resort-wide restoration project that includes upgrades to all of the property’s guest rooms, garden courtyard and event spaces. The project also added multiple new dining options, a seaside villa, reimagined Spa & Salon, expanded fitness center and new event center.

Hotel del Coronado’s Victorian-style ballrooms—the Crown Room, Coronet Room and Ocean Ballroom—also underwent a restoration that included refinished original wood floors, updated lighting and sound systems, and a preserved wall painting from 1888. The building’s central garden courtyard has also been returned to its original design with historic walkways, pergolas and a recreated bronze statue.

Montana

Field & Stream Bozeman is the newly opened flagship property from outdoor retailer Field & Stream and features 179 guest rooms, two onsite restaurants, a 1,300-square-foot indoor pool and an outdoor hot tub.

The hotel also features a 3,600-square-foot event space called The Summit Room, a 29,000-square-foot landscaped courtyard and a public gathering space featuring a stone fireplace named The Great Room. The property is also located close to outdoor experiences such as Yellowstone National Park and Bridger Bowl Ski Area, as well as the Gallatin, Madison and Yellowstone rivers.

Mexico

Marriott’s first all-inclusive resort in Los Cabos, Hacienda del Mar Los Cabos, an Autograph Collection All-Inclusive Resort, opened along the Sea of Cortez beachfront and offers 270 guest rooms and suites. The hotel offers a variety of programming options, including Frida Kahlo–inspired art classes, yoga, cooking classes and live traditional music. The resort’s Cactus Spa also offers holistic wellness programs that feature indigenous ingredients and expert-guided therapies such as teeth whitening and other rejuvenating treatments.

Hacienda del Mar Los Cabos has eight dining venues, five pools and 31,073 square feet of meeting and event space across eight event venues. The largest of these meeting spaces is the 12,405-square-foot Hacienda room able to accommodate up to 1,600 attendees.

Washington

The latest hotel from the Populus Hotels collection, Populus Seattle, opened in Seattle’s oldest neighborhood, Pioneer Square, and marks the country’s second-ever carbon positive hotel. 

Populus Seattle offers 120 guest rooms, three onsite dining options (including a rooftop bar), two meeting spaces and a collection of over 300 nature-inspired artworks, and is centrally located 15 minutes from Pike Place Market and Seattle’s cruise port. Populus Seattle also continues many of the sustainability initiatives from the Denver property, including planting a tree for every night stayed at the hotel, utilizing 100% renewable energy and composting all food waste.

Gaylord Hotels’ Westward Expansion

The newly opened Gaylord Pacific Resort & Convention Center marks the brand’s first hotel on the West Coast and the first new Gaylord Hotels’ property since 2018. The $1.3 billion resort offers 1,600 guest rooms, 89 suites, 12 food and beverage outlets, a four-acre waterpark and more than 477,000 square feet of meeting and event space to San Diego County.

Located next to San Diego Bay and Chula Vista Marina, the resort’s guest rooms range between 389 and 623 square feet, each with a dedicated work area and views of either the mountains or bay. The resort also offers a 7,500-square-foot fitness center and bicycle rentals for offsite excursions. The property’s onsite restaurants include the brand’s signature Old Hickory Steakhouse, offering a surf and turf menu, Trēō Kitchen + Bar, featuring a locally sourced seafood menu, and Taiyō, which serves a variety of sushi options.

Gaylord Pacific Resort & Convention Center’s event spaces include 135,000 square feet of event lawns, 67 breakout rooms and four ballrooms, the largest of which is the California Ballroom, with its 140,000 square feet of space making it the largest hotel ballroom in the state and able to accommodate up to 9,488 attendees.
